These innovators usually reside in the quiet corners of the Champagne region, far from Reims and Épernay. There is a particular concentration of such experimenters in Courteron, located in the Côte de Bar. This area shares geographical and soil similarities with Chablis, making grape cultivation challenging. Champagne Fleury, the first biodynamic winery in Champagne, also originated here. The estate's oldest vines, planted in 1970, consist of 85% Pinot Noir. The naturalism and minimalism of this pioneering estate, including minimal use of sulfur, result in precise and straightforward Fleury wines. They can be wild, but are always distinctive; the best of them are consistently impressive.

Created in 1955 by Robert Fleury, the name of the classic cuvée was changed to Blanc de Noirs Brut in 2010. Each new vintage is added to the previous vintage to create a perpetual reserve in large barrels - this process is also known as the ‘Solera’ method. The cuvée is then aged using the ‘sur lattes’ method for four years. This pure Pinot Noir with straw-golden hues shows an elegant and expressive nose with subtle aromas of white peach and toffee. It has a fresh taste with a clear structure and lingering fruit flavors. This wine has a very pleasant grip.

Champagne Fleury is one of the great innovators of the Champagne region, with a legacy that blends deep-rooted tradition and forward-thinking viticulture. In 1904, a member of the Fleury family pioneered the replanting of Pinot vines on American rootstock following the phylloxera crisis. Later, during the Depression era, the family became one of the first in the region to bottle their own Champagne — an approach that was revolutionary at the time. Two generations later, Jean-Pierre Fleury would once again redefine the region’s future, becoming the first certified biodynamic grower in Champagne — a milestone that firmly established the domaine’s trailblazing spirit. Today, Fleury remains at the forefront of natural and minimalist winemaking, with an emphasis on low sulfur use. While this philosophy can occasionally result in Champagnes with oxidative nuances or unconventional edges, the wines are celebrated for their individuality and authenticity. In fact, Fleury’s top cuvées consistently impress connoisseurs and collectors alike. Innovation is deeply woven into the estate’s DNA. In select vintages, Fleury produces Champagne made entirely from 100% Pinot Blanc or 100% Pinot Gris, aged exclusively in barrels — rare expressions in the region. The domaine also crafts still red, white, and rosé wines under the AOC Coteaux Champenois designation. Another pioneering achievement is Fleury’s development of their own proprietary yeast strain, sourced from specific vineyard parcels. Though Demeter regulations mandate wild fermentation for the first fermentation, this bespoke yeast is used in the secondary bottle fermentation and is now widely adopted across the Champagne industry.
