Brothers Romain and Damien Bouchard are perfectionists who have set a new, higher standard for Chablis terroir wines. Their wines are featured on the menus of around fifteen Michelin-starred restaurants. From what we have tasted so far, Chablis fans will appreciate these terroir-driven wines. Stylistically, they are quite crystalline and chalky, without the oaky make-up.

The 2022 Domaine de l'Enclos Chablis offers aromas of ripe apples, lemon oil, and white flowers. On the palate, it is medium-bodied, open, and generous, with good texture and mineral depth. This approachable Chablis drinks well from its early days. The Domaine owns three different plots in this appellation, with vines ranging from 20 to 40 years old.

We are delighted to announce the arrival of some of the most exciting wines from Chablis today – Domaine de l'Enclos. Based on our tastings so far, we are confident that Chablis fans will appreciate these terroir-driven wines from the esteemed Romain and Damien Bouchard of Domaine de l'Enclos. Though the winery is young, with its first harvest in 2016, Romain and Damien are seasoned winemakers who honed their skills at their family estate, Domaine Pascal Bouchard. As fifth-generation winemakers, they bring a wealth of accumulated knowledge to their craft. Stylistically, their wines are typically crystalline, and exploring the wide range of sites (including five Premiers Crus and three Grands Crus) provides an insightful lesson in terroir. All fermentations here are carried out in stainless steel tanks. While the Premiers Crus and Grands Crus are aged in barrels, new oak never overshadows the wine's natural chalky character. Vinification is done without added sulfur, using indigenous yeasts. The wines undergo minimal intervention – they are neither fined nor cold-stabilized. Only light filtration and moderate additions of sulfur (SO2) are made prior to bottling. The estate’s 29 hectares of vineyards are carefully tended by a team of 12-19 workers, who maintain the soil year-round, encourage the growth of local ground cover, and use only organic fertilizers. Pruning, vine management, and harvesting are done both manually and mechanically. The average age of the Chablis vines is 30 years, with the oldest vines exceeding 50 years.
