Domaine Henri Boillot has an exceptional reputation. The phasing out of new oak barrels in 2021 marks a stylistically watershed moment for Domaine Henri Boillot, moving away from nutty towards a more subdued, mineral, and terroir style. The vineyards are grown organically, without the use of any chemicals. The appellations produced consist mainly of Premier Crus and Grand Crus. There is also a special cuvée - Puligny-Montrachet 1er Cru Clos de la Mouchere- a wine produced only by Guillaume and Henri Bouillot.

Before us is a wine from the Grand Cru category vineyard, which mixes shades of honey, dry white flowers, and garden fruits. Full-bodied, satiny, and layered, rich and concentrated, with a deep textural core and a bright, salty aftertaste. This is a majestic white wine Côtes de Beaune.

The team at Lambier Wines has been following Domaine Henri Boillot's work closely in recent years. Barrel fermentation is still the order of the day for most of Domaine Henri Boillot's cuvée red wines, and maceration has been reduced. The red wines are so good that it is appropriate to recall that until Boillot's father reoriented the estate to white wine production, the domaine was known primarily for its red wines. The mention of white wines is an occasion to talk about the vertical press, and it started to be used at Domaine Henri Boillot for all its white wines. It's worth noting that they have a chalky structuring extract that sets them apart from the lighter-weight vintages. There is less of the nutty nuance that was once quite prominent in the white wines at this address. A trend in recent years has been a move towards more and more domaine-grown fruit: first came the Pommard 1er Cru Clos Blanc wine, followed by the Meursault 1er Cru Clos Richemont. Boillot seems to have ambitions to continue this gradual transition.

The holding is right in the middle of Bâtard-Montrachet, with rows all the way up and down. Mid yellow. A weighty punchy bouquet, not quite so fine. Massive on the palate and the fruit takes on a whiter, not over ripe configuration, with excellent thread of acidity. Still an absolute baby but will certainly achieve its grand cru status.

TOP QUALITY An exemplary Bâtard and among the best wines of the appellation. There is a deep lemon-yellow hue and pronounced ripe apple and pear fruit aromas with hints of spice, cream, butter and toasted hazelnut. The texture is lush and dense, just this side of opulence, but there is enough acidity to balance everything out and lead it to a harmonious, lingering finish. It is produced from a domaine-owned parcel of one third of a hectare on the border between Puligny and Chassagne, fermented and aged in new casks.
