Caol Ila 2007 Moon Import 40th Anniversary / Lawless is an exclusive whisky, with only 456 bottles released worldwide. The whisky began its maturation in 2007 and, after careful aging, the limited edition was launched in 2020. With an ABV of 45%, Caol Ila 2007 Moon Import is an aromatic whisky featuring light vegetal and malty notes. The flavor profile showcases well-integrated oak with hints of smoke, oiliness, peat, and barley. The finish is long, leaving a trace of oily wood.
Caol Ila, founded in 1846 by the charmingly named Hector Henderson, is located on the northern part of Islay, near Port Askaig. The distillery is set in picturesque, floral surroundings with views of the cove and the Paps of southern Jura. It sources its water from Loch Nam Ban, with the waters flowing through limestone and peat before reaching Caol Ila. In 1852, the distillery was sold to Norman Buchanan, and later, due to financial difficulties, it was acquired by the Glasgow-based blenders Bulloch, Lade and Co, who renovated the facilities in 1879. After the company's liquidation, Caol Ila was purchased by Distillers Company Ltd, and eventually transferred to Scottish Malt Distillers. Today, the distillery has a moderate production capacity of 3.65 million liters per year, with the majority of its output used in Johnnie Walker blends. Only about 5% is reserved for maturation as single malt whisky. Since 1999, Caol Ila has experimented with unpeated single malts, and in 2006, it released its first unpeated bottling, an eight-year-old. The distillery, whose name means "Sound of Islay" in Gaelic, is part of Diageo's Classic Malts range, featuring 12- and 18-year-old expressions, as well as a Moscatel-finished Distillers Edition. Independent bottlings of Caol Ila are also available.
