The Première Cuvée is a deeply personal interpretation of the entire Champagne region, crafted through the selection of 35 out of the 320 crus in Champagne. The precise composition, involving more than 30 crus, remains a closely guarded house secret. This blend includes 25 vintages, dating back to 1985, which can constitute up to 50% of the final blend. The aging process exceeds legal requirements, with three years sur lie followed by at least an additional five months after disgorgement. The primary aromas reveal the citrus notes of Chardonnay: lime and grapefruit. Then, the red fruit aromas of Pinot Noir emerge: redcurrant, raspberry, and morello cherry. When allowed to open up in the glass, the wine develops hints of dried fruits, sometimes exotic, contributed by Pinot Meunier. The palate is lively and vivacious, thanks to a low dosage, with the aromas from the nose echoed in the mouth. Initial flavors of citrus, almonds, and toasted bread are soon joined by redcurrant jelly and darker fruits like cherry, fig, and blackberry.
