Scyfion Aultmore 2006 Cask (Tequila Cask Finished) is a unique Scotch whisky made from Aultmore distillate and aged in a tequila cask. This whisky is part of an experimental series utilizing spirits casks. It was aged for 18 years in total, starting in bourbon casks and finishing with an additional 4 years in tequila casks. This experiment aimed to explore how spirits casks influence the whisky's profile, using a 100% agave tequila cask. The opportunity to use such casks is relatively recent, and with the whisky spending 4 years in it, it was utilized soon after the new regulations were introduced. Scyfion Aultmore 2006 Cask has acquired intriguing fruity and grassy agave notes, noticeable in both aroma and taste. The whisky's aroma features floral and honeyed scents with butterscotch, enhanced by citrus and spices. The flavor profile includes vanilla, pear, ginger, light pepper, floral pollen, sweet nuts, herbaceous undertones, and a slightly dry finish.
Aultmore Distillery, built in 1895 by Alexander Edward of Benrinnes, is strategically positioned just north of Keith, in the heart of Speyside, Scotland's renowned whisky-producing region. The Pattison Crisis of the late 1890s posed considerable challenges for Aultmore, resulting in its closure for several years. In 1923, John Dewar & Sons acquired the distillery for £20,000, and it became part of Distillers Company Limited (now part of Diageo) in 1925. The transition from steam to electricity occurred in 1969, and by 1971, Aultmore expanded its capacity by doubling its stills to four. Today, the original steam engines remain on display as a testament to the distillery’s enduring heritage. The name Aultmore, meaning ‘Big burn’ in Scots Gaelic, signifies its deep connection to its water source, the Burn of Auchinderran. The majority of Aultmore's spirit contributes to Dewar’s blended whiskies, but following Bacardi’s acquisition of the brand, an official twelve-year-old bottling was launched in 2004. The distillery has also attracted the attention of respected independent bottlers, including Blackadder and Douglas Laing. Scyfion is a notable independent Ukrainian whisky bottler, founded by Ruslan Zamoskovnyi. Unlike traditional distilleries, Scyfion does not produce its own spirit but is celebrated for aging Scotch whisky in unique casks, primarily sourced from Ukraine and neighboring regions.
