Fermentation uses natural yeasts in enamel-lined tanks and neutral French oak barrels, with partial malolactic fermentation. The wine is aged on lees for around 4 years, developing depth and character, and finished with a dosage of 1.6 g/L, qualifying it as Extra Brut. Françoise Bedel & Fils cultivates 9 hectares of vines ranging from 30 to 60 years old. The vineyards are located across several villages, including Crouttes-sur-Marne, Nanteuil-sur-Marne, Charly-sur-Marne, and Villiers-Saint-Denis, on both sides of the Marne River. The estate's history began with Fernand and Marie-Louise Bedel, with Françoise Bedel taking over part of the Domaine in 1979. Since 1998, the entire vineyard has been managed organically, with biodynamic practices introduced on a small scale in 1997 and fully implemented across the estate by 1999. Certification by ECOCERT SAS followed, and by 2006, the vineyard reached its current size of 8.4 hectares, all farmed biodynamically. This approach prioritizes harmony in the vineyard and reflects the characteristics of the terroir in the wines. Different subsoils across the plots enable blending and the production of specific cuvées that showcase the unique attributes of each terroir.
