Domaine Carrette cultivates 16 hectares across Vergisson and five nearby villages. Hervé oversees year-round vineyard care, while Nathalie, a trained oenologist, leads winemaking from fermentation to bottling. This 2023 Pouilly-Fuissé shows an expressive nose of stewed apple, linden, and acacia, with hints of roasted hazelnut and fresh butter. On the palate, the wine is rounded and supple, lifted by a fresh, clean finish. A classic and elegant expression of the appellation, well-suited to a wide range of dishes. The cuvée is a blend of several terroirs located in the communes of Vergisson and Solutré-Pouilly. The organically certified vineyards span approximately 3 hectares, with plots ranging from less than 0.1 to 0.6 hectares, planted with Chardonnay between 1950 and 2016. Soils are varied clay-limestone, more or less deep and stony, with altitudes between 290 and 370 meters and slopes facing east, south, and north. A total of 6,546 bottles were produced in the first bottling, followed by 12,285 bottles and 105 magnums in the second.

The 2023 vintage of Pouilly-Fuissé from Domaine Carrette was shaped by even warmer conditions than 2022, with high temperatures in spring, early summer, and again in early September. Harvest took place from September 8 to 16, beginning in intense heat and finishing in milder weather. The vineyards, certified organic and covering about 3 hectares across Vergisson (60%) and Solutré-Pouilly (40%), are planted with Chardonnay on varied clay-limestone soils at altitudes ranging from 290 to 370 meters. Vines are aged from 1950 to 2016, with parcels ranging from under 0.1 to 0.6 hectares. Manual harvesting was followed by separate vinification for each plot, including spontaneous fermentation with indigenous yeasts in oak barrels, foudres, or temperature-controlled stainless steel. Malolactic fermentation occurred naturally. The wines were aged on full lees for 10 months, then blended in July 2024 and matured further on fine lees for 3 to 8 months. The first bottling took place on November 13, 2024 (6,546 bottles); the second on March 21, 2025 (12,285 bottles and 105 magnums). The style is comparable to 2022: generous, expressive, with low acidity and good aging potential for the top cuvées.
