Les Caillerets is produced from 60-year-old vines. Hints of baked bread, peach, lit matchstick, white flowers, beeswax, and citrus dominate the aroma. The wine is full-bodied, terroir-like, with bright freshness and a clean, long aftertaste.
The young generation traditionally carries the responsibility for the renowned Domaine Paul Pillot. The founder took charge of the domaine at the young age of twenty, and subsequently, his children, Thierry and Christel, assumed leadership with full autonomy granted by the older generation. With great enthusiasm, they joined the emerging movement of innovative winemakers in Côte d'Or, reinterpreting the classic Burgundy wine style. Their pursuit involved striking the perfect balance between concentration and freshness in the wine while preserving the grape's maturity. They meticulously selected delicate and precise aging techniques, avoiding excessive use of new oak, to maintain the fruity and mineral aspects of the aroma and taste. Through these straightforward yet essential principles, Domaine Paul Pillot has established its distinct style. William Kelley: "Tasted from bottle, the 2018 Chassagne-Montrachet 1er Cru Les Caillerets has fulfilled all the promise it showed last year, opening in the glass with aromas of crisp Anjou pear, citrus zest, freshly baked bread, nutmeg and struck match. Medium to full-bodied, deep and layered, it's tightly wound and precise, with real cut and back-end grip".

Consistently one of the stars in Thierry Pillot's stellar range of Chassagne Premiers Crus, this is the freshest, most focused wine of the lot, which often reminds me of a Grand Cru Chablis from Blanchot. Briney, sea-shore aromas segue into a palate that's wonderfully fresh and energetic, with 10% new wood providing some scented spicy undertones. The balance of this wine is almost balletic in its precision. Drinking Window 2023 - 2035. (10/2019)

Here too there is a barely perceptible suggestion of exotic fruit to the ripe yet cool combination of citrus confit, baked apple, spice and matchstick. The medium weight flavors aren't quite as dense as those of the CSJ but they're finer and possess more minerality that adds a sense of lift to the bone-dry and saline-inflected finale. This is a Caillerets of finesse, indeed it's notably finer than I usually find it. (6/2020)
