The Domaine Rossignol-Trapet range offers a great insight into the terroir of Gevrey-Chambertin, with three very contrasting Grand Cru: Chambertin, Latricières-Chambertin, and Chapelle-Chambertin. The winemaking style from Domaine Rossignol-Trapet can be described as delicate wines, with light extraction, never deep in color but creating subtle textures. Biodynamics acts as the cornerstone.
Chambertin is located directly under the forest that rises above the hillside. This location is slightly cooler than Clos de Bèze, which gives it more freshness. The Domaine Rossignol-Trapet plot is located in the heart of Chambertin and perfectly reflects the typicality of this terroir. The average age of the vines is 55 years. Typically Domaine Rossignol-Trapet produces around 22-23 barrels of Chambertin, which is very low considering the demand. The 2020 Chambertin has an expressive aroma full of minerals and red berries and a captivating floral component that becomes more vibrant with aeration (like Chapelle-Chambertin). The palate has a fine tannin structure, this is a focused wine, with dark berries, sea salt, and spices.
Brothers Nicolas and David Rossignol produce some of the most sought-after wines in Gevrey-Chambertin. Domaine Rossignol-Trapet switched to biodynamics back in the 90's, it was a conscious choice. Over the years, the vines have gained strength, they can withstand the hot weather and the vintages are excellent. On average, the vines are 60 years old and grow on limestone-clay soil. All work in the vineyard is done by hand, a prime example being in 2018 when the brothers resisted the spread of mold by hand fighting it using horsetail tea. Rossignol-Trapet wines are not massive and muscular - they are wines of purity, complexity, and finesse that evolve to show their Gevrey-Chambertin terroir with finesse. And while they may take a little time, the best Burgundy wines are worth the wait. The team at Lambier Wines is convinced that Rossignol-Trapet is a name that deserves more attention.
