Beyond the Vines: The Philosophy
David and Nicolas craft soulful Pinot Noirs from biodynamic vineyards at Domaine Rossignol-Trapet, a small domaine certified by Demeter, capturing the essence of their legendary terroirs.
The brothers, who founded the domaine in Gevrey-Chambertin with their father in 1990 after a family split with Jean-Louis Trapet, are a true embodiment of Burgundy’s heritage. A visit to their domaine is as much about hospitality as it is about wine; tastings often stretch for hours, offering a deeper understanding of the vineyards and their unique personalities. David and Nicolas are deeply rooted in Gevrey-Chambertin, an appellation that represents the very heart of Côte de Nuits. With its nine Grand Crus, Gevrey-Chambertin captures a rare combination of vibrant minerality, powerful structure, and remarkable finesse—a balance that has made it synonymous with the pinnacle of Burgundy. These wines, particularly the Grand Crus, have the potential to evolve beautifully for 30 years or more.
From the beginning, the brothers committed to sustainable practices, converting to organic farming early on and transitioning to biodynamics in 1997. Today, their vineyards, covering just 14 hectares—similar in size to Domaine Armand Rousseau—are certified organic and cultivated under Demeter guidelines, known for their rigorous standards.
Their approach centers on exceptional plots of old vines, some dating back to before the First World War, planted at extraordinary densities of 10,000 to 11,000 vines per hectare. This meticulous attention to detail enhances the concentration and complexity of their wines. Drawing on the wisdom of generations of vignerons and their own expertise—honed through studies in Beaune and Toulouse—David and Nicolas have elevated their craft year by year. Careful hand-harvesting, precise selection, and a restrained use of oak reflect their commitment to expressing the purity and depth of their terroirs.
The Rossignol Trapet Way: Precision and Purity in Pinot Noir
David and Nicolas focus on showcasing the understated elegance of Pinot Noir, crafting wines that are balanced, harmonious, and layered with delicate fruit, deep minerality, and soft tannins. They prioritize harvesting late to ensure fully ripened grapes, resulting in wines that are both approachable in their youth and capable of graceful aging. Their style avoids tartness or overly cerebral expressions, instead offering wines with finesse, subtle aromas, and an inviting character that reflects the vibrancy of the terroir they’ve carefully nurtured through sustainable practices.
The use of oak is deliberately restrained to preserve harmony and transparency: Grand Crus see no more than 50% new barrels, Premier Crus around 25%, and Villages wines typically no more than 20%, with even lower proportions in recent warmer vintages. This thoughtful approach highlights the purity of each wine, from the Bourgogne Rouge to the exquisite Grand Crus, making them some of the finest in Burgundy.
These wines don’t just impress; they invite you to experience the brilliance of Burgundy with authenticity and accessibility. They offer a rare combination of charm, depth, and value that reflects the brothers’ dedication to their craft. Each bottle from Domaine Rossignol-Trapet conveys joy and a deep connection to the distinctive character of the region.
