The commitment to extend organic and biodynamic farming practices to all vineyards managed by Domaine de Chevalier, launched in 2021, is a milestone on a path laid out in 2010. This transformation, the result of long reflection and gradual implementation, means inexorable progress toward obtaining organic certification for all production by 2023. The Domaine de Chevalier vineyards are located on hilly slopes of white stones brought to the area from the Pyrenees by glaciers during several ice ages over millions of years. The gravel layer is mixed with black sand, a rarity in Bordeaux. In addition to unique soils, high planting density and low yields are also necessary to create great wines, which Domaine de Chevalier adheres to. The optimum planting density for this terroir is 10,000 vines. This density creates competition between plants, resulting in low yields of grapes with thin skins and a high concentration of color, aroma, and tannins. The harvest involves a team that remains unchanged over the years, with the same pickers working in each plot year after year. They have to walk five times along the rows to pick the ripest berries, which undoubtedly affects the high quality of Domaine de Chevalier.
