The soils of Gevrey-Chambertin 1er Cru Les Champeaux have been tilled using a horse-drawn plow for the past ten years, yielding superb results: an even more expressive wine, with a longer palate. The color is intense and dark, and the tannins envelop the palate, with the finish offering fresh berry flavors. This is a full-bodied wine from the first sip to the finish. This ancient vineyard parcel retains its original character, embracing its historic dry stone walls and rustic bothies, preserving a timeless charm amidst the modern world. The average age of the vines is 70 years. The average production is 2,000 bottles. Fermentation is carried out using only natural yeasts. Maturation lasts 18 months in oak barrels: 80% in new barrels and 20% in once-used barrels.
Charles Mortet founded his estate in 1956 with one hectare of vines. Following Burgundian tradition, he sold most of his produce to trading houses. In 1978, his son Denis joined him, along with Denis's wife, Laurence. At the time, they were 22 and 20 years old, respectively. Coming from a farming family, Laurence quickly learned to work in the vineyard. Gradually, Denis began to focus on developing the sales of bottled wine. In 1993, he succeeded his father and established Domaine Denis Mortet. At that time, the estate had about 4.5 hectares in the regions of Gevrey-Chambertin, Chambolle-Musigny, and Vougeot—but this was just the beginning of their vineyard expansion. In 1993, the domaine acquired Premier Cru Lavaux Saint-Jacques plots in Gevrey-Chambertin, as well as vineyards in Motrot, Vellé, Champs, and La Côte des Longeroies in Marsannay. In 1997, they acquired lands in the La Combe du Dessus area, followed by the purchase of Chambertin Grand Cru vineyards in 1999, and Premier Cru plots and Derée lands in 2000. The estate now covers 11.2 hectares. In 2000, Denis's son, Arnaud, joined the family business. Since 2005, Arnaud and his mother have been managing the estate.
