Over the years, Selosse has increasingly focused on what he calls the "one gram of mineral substance in a liter of grape juice, not the 250 grams of organic matter." He questions the scientific claim that vines don't absorb minerals from the soil, noting that no one has ever explained where that single gram of mineral salts originates. From this viewpoint, biological aging and oxidation—deeply influenced by his relationship with Spanish wines, particularly the biological maturation of Jerez and the extended élevage of Rioja, which began during his first visit to the Iberian peninsula in 1972—become methods to "burn away" the organic matter, leaving behind only the terroir-driven mineral essence that fascinates him. For this reason, he places greater emphasis on texture rather than aroma.
Champagne Jacques Selosse V.O. ‘Version Originale’ Blanc de Blancs Grand Cru Extra Brut opens with captivating aromas of dried fruit, citrus, toasted nuts, rich butter, yellow fruit, clear honey, and a touch of fenugreek. The wine is full-bodied, broad, and concentrated, yet retains excellent tension. Its precision in aging is particularly remarkable. Finishing with a long, salty aftertaste, this wine doesn’t stay in the bottle long once opened.
In the 1980s, the unconventional and steadfast Anselme Selosse was already implementing techniques that many Champagne producers now embrace: organic and biodynamic vineyard practices, low yields, single-vineyard cuvées, minimal use of sulphur dioxide, natural yeasts, no malolactic fermentation control, and for some cuvées, the use of the solera method. The Domaine Jacques Selosse is located in the village of Avize, within the Côte de Blancs. This family-run estate spans nearly 8 hectares of vineyards across the crus of Avize, Cramant, Oger, Le Mesnil-sur-Oger, Ay, Mareuil-sur-Aÿ, and Ambonnay. Currently, the cultivated vineyard covers 8.3 hectares, largely composed of old vines, some dating back to 1922, with an average vine age exceeding 55 years. The estate is divided into 54 parcels, most of which are situated on highly-rated, Grand Cru classified plots. The dominant varietal is Chardonnay, which covers 7.3 hectares primarily in Avize, but also in Cramant, Oger, and Le Mesnil-sur-Oger. Pinot Noir represents 1.0 hectare, located in Ay, Mareuil-sur-Aÿ (Premier Cru, rated at 99%), and Ambonnay. The estate includes over 70,000 Chardonnay vines and 9,500 Pinot Noir vines. Since 2010, Domaine Jacques Selosse has offered the "Lieux-Dits" collection, featuring six cuvées from six distinct parcels, each named after its origin village. These wines provide a unique journey through the Champagne terroir, showcasing the influence of each parcel. The collection includes three 100% Chardonnay cuvées from Cramant ("Chemin de Châlons"), Le Mesnil-sur-Oger ("Les Carelles"), and Avize ("Les Chanteraines"). Additionally, there are three 100% Pinot Noir cuvées (except for "Bout du Clos" in Ambonnay, which is 80% Pinot Noir and 20% Chardonnay) from Mareuil-sur-Aÿ ("Sous Le Mont"), Aÿ ("La Côte Faron"), and Ambonnay ("Le Bout du Clos").
