In our humble opinion, Tomislav Markovic is more than just a winemaker—he transcends the classical understanding of wine.
While he doesn't classify himself as a natural wine producer, he employs a biodynamic approach and uses wild yeast fermentation. His Chardonnay and Pinot Noir offer excellent alternatives to the Burgundian style.
Tomislav’s journey to winemaking was not instantaneous. He spent considerable time mastering the craft, gaining practical experience through apprenticeships, including at Domaine de Montille in Volnay.
The vineyards consist of 0.5 hectares of his own vines in Baden and another 0.5 hectares leased in Rheinhessen. White wines are produced from Chardonnay, Sauvignon Blanc, and Riesling, while red wines are made from Pinot Noir and Touriga Nacional. The vineyards are predominantly farmed by hand, following biodynamic principles, although there is no official certification. Special attention is given to enhancing biodiversity, improving soil fertility, and reducing yields.
Tomislav Markovic’s premium wines include two red wines:
- Pinot Noir 'On the Rocks' – Grown on volcanic soil, this wine undergoes open fermentation using whole bunches of grapes, with spontaneous fermentation and no filtration.
- Pinot Noir 'Parabole' – Made from old vines planted on loess-loamy soil over volcanic rocks, this wine is vinified similarly to 'On the Rocks,' but with lower yields.
- Sauvignon Blanc 'Siefersheimer Heerkretz' – A white wine fermented spontaneously in Slavonian oak, aged for 18 months on lees with an oxidative character, and unfiltered if possible.
