Jean-Claude Hébrart now leads the domaine established by his father, who began producing Champagne in 1962 with just three barrels. Today, Jean-Claude oversees 17 hectares of vineyards spanning 80 parcels across 11 villages, with a significant portion located in Aÿ. Additionally, he sources grapes for 25% of the production. Committed to precise viticulture, Hébrart employs the Chablis pruning method, particularly for Chardonnay, as he believes it enhances the variety. He actively works the soils and practices tillage between rows while avoiding cover crops. His Champagnes are distinguished by their vinous, incisive, and saline profiles, emphasizing bright and crystalline qualities.
The 2018 Marc Hébrart Rive Gauche-Rive Droite Grand Cru Millésime offers a balanced blend of equal parts Pinot Noir from Aÿ and Chardonnay from the Côte des Blancs. This Extra Brut Champagne, with a dosage of 3 grams per liter, was disgorged in preparation for long-term aging and refinement. More complex and spicier than its 2016 counterpart, this vintage reveals aromas of spices, toast, baked bread, white flowers, and spring blossoms. Medium to full-bodied, it is dense and rich, with a delicately layered fruit core. The palate is well-balanced, concluding with bright acidity and a refined, pinpoint mousse. Champagne Marc Hébrart, founded in 1963 by Marc Hébrart in Mareuil-sur-Aÿ, is now managed by his son, Jean-Paul Hébrart. The estate spans 14.5 hectares across 80 parcels in 11 villages, including prestigious Grand Cru sites in Aÿ, Avize, Oiry, Chouilly, and Louvois, as well as Premier Cru vineyards in Mareuil-sur-Aÿ, Bisseuil, Avenay-Val-d’Or, Dizy, and Hautvillers. With a vineyard composition of 70% Pinot Noir and 30% Chardonnay, the domaine focuses on sustainable viticulture, minimizing synthetic treatments while highlighting the unique characteristics of each parcel. Vinification is carried out separately for each plot to preserve their distinct identities. While most wines are fermented in stainless steel, since 2004, select cuvées, such as the Rive Gauche-Rive Droite, undergo fermentation and aging in oak barrels, adding depth and complexity. These cuvées often blend Pinot Noir from the Montagne de Reims with Chardonnay from the Côte des Blancs, emphasizing terroir-driven character.
