This cuvée typically consists of a blend of 15 wines spanning 5 to 6 different vintages. Seventy percent of the wines are vinified in small oak barrels, and 40% do not undergo malolactic fermentation. While Ambonnay’s soils differ from Chablis’ Kimmeridgian origins, this wine displays an uncannily Chablis-like character rarely found in Champagne, mingling mushroom, fresh lemon, sea breeze, and oyster shell. The Champagne House Eric Rodez uses its own mix of yeast from five distinct strains, adding a unique individuality to the wine. Produced by the eighth and ninth generations of the Rodez family, this Champagne reflects a winemaking legacy dating back to 1757 in the magnificent Grand Cru village of Ambonnay. The local chalky slopes, ideally suited for Pinot Noir, are the foundation of the estate's focus. The vines yield robust yet refined Pinot Noir, forming the backbone of their majestic Champagnes. In addition to leading the family domaine, Eric Rodez gained invaluable experience as an oenologist for the renowned house of Krug and honed his skills in Alsace, where he was introduced to organic viticulture. Inspired by these practices, Rodez now farms his six hectares in Champagne organically, believing it allows him to most authentically express the richness of the terroir. Eric Rodez primarily ferments in barrels and incorporates a significant percentage of reserve wines in his cuvées. This approach lends the Champagnes remarkable depth, generosity, and structure, enhanced by the complexity imparted by oak aging.
