Marc Hebrart is a small and very interesting producer from the Vallee de la Marne that produces Pinot Noir-dominated champagne from its own vineyards. The trick is to balance the minerality and bright acidity of the Chardonnay with the strong juiciness of Pinot Noir. It also vinifies all grapes from individual plots separately to preserve the individuality of each terroir.

Noces de Craie Grand Cru is an assemblage of five Grand Cru sites. The wine is aged on the lees for 48 months. Aromas of red fruits, pastries, pear and white flowers. The taste is rich, but not heavy, with an excellent mineral base. This is a gastronomic champagne that goes well with food.

Marc Hébrart's commitment to organic practices is evident where feasible, with a preference for avoiding synthetic treatments. The vinification process treats each vineyard block individually, with malolactic fermentation deliberately blocked for all wines except two: the Coteaux Champenois and the Rive Gauche – Rive Droite, a Champagne crafted in a 'Burgundian' style, composed of Chardonnay from Chouilly and Avize, and Pinot Noir from Aÿ. Notably, the House excels in delivering excellent quality, particularly with the Brut Sélection, all at highly attractive price points.
