Francois Secondé stands alone as the sole independent grower, or RM (Récoltant-Manipulant), in the esteemed Sillery Grand Cru region. In the 17th century, Sillery, alongside Aÿ, held great renown as one of the most celebrated Champagne wines, primarily in still form. Situated on the northern slopes of the Montagne de Reims, Sillery, traditionally known for its focus on Pinot Noir, deviates from the norm by cultivating a higher proportion of Chardonnay (48%) than any other grand cru outside the Côte des Blancs. Additionally, the vineyards in Sillery encompass Pinot Noir (43%) and Pinot Meunier (9%) grape varieties.
The Blanc de Blancs Sillery Grand Cru Brut 2016 is crafted from grapes sourced from a single exceptional Chardonnay vineyard plot. The vines boast an impressive average age of 63 years. The vinification process involves fermentation in vats, including malolactic fermentation. The wine then undergoes a maturation period in oak barrels, without undergoing filtration. It rests in the cellar for a minimum of 5 years before disgorging, with a dosage of 8g/l. The annual production is limited to 2,500 bottles. On the nose, this Champagne displays a powerful and fresh character, revealing enticing aromas of acacia, honeysuckle, and candied fruit. The palate offers an elegant experience, showcasing finesse with notes of white flowers, spices, and citrus fruits. It boasts a remarkable aromatic persistence and demonstrates excellent balance and harmony.
For many centuries, Sillery has been renowned for producing the world's most highly sought-after still white wine in the Champagne region. Situated in Sillery, Champagne François Secondé is a winery with a cultivated land area of 5 hectares. As an independent winemaker and the sole harvester-maker and Champagne producer of authentic Sillery Champagne, Champagne François Secondé holds a unique position. At the age of 14, François Secondé left school and began his journey as an apprentice, eventually working as a vineyard laborer. He initially leased a vineyard and acquired his first one in 1972. Presently, Champagne François Secondé's vineyard is predominantly composed of 2/3 Pinot Noir and 1/3 Chardonnay grapes and is located in Sillery, Mailly-Champagne, Puilsieux et Verzenay. The vines, averaging 37 years of age, are cultivated using sustainable practices that prioritize environmental preservation.
