Francois Secondé stands alone as the sole independent grower, or RM (Récoltant-Manipulant), in the esteemed Sillery Grand Cru region. In the 17th century, Sillery, alongside Aÿ, held great renown as one of the most celebrated Champagne wines, primarily in still form. Situated on the northern slopes of the Montagne de Reims, Sillery, traditionally known for its focus on Pinot Noir, deviates from the norm by cultivating a higher proportion of Chardonnay (48%) than any other grand cru outside the Côte des Blancs. Additionally, the vineyards in Sillery encompass Pinot Noir (43%) and Pinot Meunier (9%) grape varieties.
The vineyard boasts an impressive age of 56 years, with an equal distribution of 50% Pinot Noir and 50% Chardonnay vines. This wine is the result of a multi-year blend that commenced in 2009 and has been immortalized through a solera system. During the winemaking process, a portion of this vintage is aged in oak barrels, undergoing malolactic fermentation. Following vinification, the wine rests in the cellar for a minimum of 24 months before disgorging, with a dosage of 6 grams per liter. The annual production ranges between 500 and 600 bottles. On the nose, this wine offers an intense and refined experience, with mature fruit aromas and a subtle touch of vanilla. The palate is delicate, displaying a beautiful minerality that enhances its overall finesse.
