The Domaine Rossignol-Trapet range offers a great insight into the terroir of Gevrey-Chambertin, with three very contrasting Grand Cru: Chambertin, Latricières-Chambertin, and Chapelle-Chambertin. The winemaking style from Domaine Rossignol-Trapet can be described as delicate wines, with light extraction, never deep in color but creating subtle textures. Biodynamics acts as the cornerstone.
The 2020 Chapelle-Chambertin Grand Cru has a lovely aroma, elegant and refined, not lacking in energetic red fruit. It has a sense of energy. The flavor is medium-bodied, with fine-grained tannins, quite dense at the moment, as for the Domaine Rossignol-Trapet style, salty with a subtle maritime influence. It seemed to the team at Lambier Wines that this grand cru is like molecular cuisine, it changes as it aerates, gaining more body and spice. One of those wines worth hunting down!
Brothers Nicolas and David Rossignol produce some of the most sought-after wines in Gevrey-Chambertin. Domaine Rossignol-Trapet switched to biodynamics back in the 90's, it was a conscious choice. Over the years, the vines have gained strength, they can withstand the hot weather and the vintages are excellent. On average, the vines are 60 years old and grow on limestone-clay soil. All work in the vineyard is done by hand, a prime example being in 2018 when the brothers resisted the spread of mold by hand fighting it using horsetail tea. Rossignol-Trapet wines are not massive and muscular - they are wines of purity, complexity, and finesse that evolve to show their Gevrey-Chambertin terroir with finesse. And while they may take a little time, the best Burgundy wines are worth the wait. The team at Lambier Wines is convinced that Rossignol-Trapet is a name that deserves more attention.
