Domaine de la Cras Bourgogne Coteaux de Dijon Blanc 2022 is an organic Chardonnay from the Dijon area, aged for 12 months in barrel (10% new oak). While the vineyards around Dijon are often associated with Pinot Noir, Marc Soyard demonstrates with this Chardonnay that the variety can thrive just as well in this terroir. The wine offers high-intensity aromas of lemon ice cream, sesame, brioche, and yellow plum. On the palate, it is dry with medium-high acidity, well-integrated alcohol, and a lingering aftertaste of dried apricot. A fascinating Chardonnay from a rarely seen appellation.
In 2013, the Municipality of Dijon acquired the 160-hectare Domaine de la Cras farm just outside the city. The previous owner had established a winery and planted 8 hectares of vineyards (5 hectares of red varieties and 3 hectares of white varieties) classified under Bourgogne AOC status, with the potential for an additional 13 hectares to be planted. To find a winery manager, an open competition was organized with the following criteria: organic vineyard management, a young winemaker with no vineyards of their own, and a willingness to open the domaine for public educational events. Once Marc Soyard was chosen, he was granted full management rights: he could live on the domaine, tend the vineyards, and produce and sell wine, agreeing to pay the city of Dijon an annual "rent" in the form of bottles of wine.
