The 'L'Equilibriste' cuvée lives up to its name, displaying remarkable balance on the edge! Tension is key: the acidity is present but not overly austere (especially compared to the 2020 vintage). The wine is substantial yet slightly more rounded on the finish, thanks to its aging. It offers a distinct interpretation, different from 95% of Burgundy Chardonnays—clearly liberated and natural, but not overly challenging, with precise, clean flavors. Burgundy is evolving, and Marc Soyard is one of its driving forces!
L'Equilibriste Blanc was grown on a hectare plot of Chardonnay in Talant planted by Marc in 2018. This town is close to Plombières-les-Dijon, but the vineyard is located across the valley where the climate is different from the conditions at Domaine de la Cras. Despite the City of Dijon's preference to place new vineyards closer to the old ones, Marc chose Talant to evade local weather risks such as frost and hail and to explore a neighboring terroir long abandoned after phylloxera. Like the other wines in the Equilibriste range, L'Equilibriste Blanc is bottled without added sulfur.
