Hervé Bizeul, a former sommelier and wine journalist turned winemaker, has become one of the leading figures in Roussillon. Free from the weight of tradition and inspired by the great wines he's encountered over the years, Bizeul set out to prove that this southern French region can produce wines on par with the world's finest. His winery now features rows of modern stainless steel tanks, but as he puts it: “Technology is like money in poker—you need it to play, but it doesn’t guarantee you’ll win.” He believes that crafting great red wine isn’t about technology.

Bizeul began with humble beginnings—his first wines were made in a converted garage using used barrels from Domaine de la Romanée-Conti and Château l’Angélus. Today, he still keeps a limited selection of older vintages available for private clients and restaurants. Wines like the 2005 Le Clos des Fées remain remarkably youthful, and vintages such as the 2007 or 2005 La Petite Sibérie are drinking beautifully now.

Though grounded in the traditional grapes of the region, Bizeul has also experimented with less common varieties like Cabernet Franc, Tempranillo, and more recently, Pinot Noir—a project that’s already shown strong results. In a region increasingly focused on quality, his domaine stands out as one of the most dynamic and forward-thinking.

Le Clos des Fées, founded by Bizeul in 1997, is located in the Languedoc-Roussillon region. What began as a few vineyard plots and a minimalist garage setup—complete with just four small resin tanks and cheesecloths for filtering—has grown into a respected estate.

Today, the domaine farms seven vineyard sites across Vingrau, Tautavel, Maury, Calce, Lesquerde, Opoul, and Espira de l’Agly. These sites span a diverse mix of soils, from limestone and clay to granite and stony terrain similar to the famous galets of Châteauneuf-du-Pape. Combined with a wide range of microclimates and exposures, this diversity creates ideal conditions for Syrah, Grenache, Mourvèdre, Carignan, Cabernet Franc, and Tempranillo.

The wines reflect this variety. One of the best-known cuvées, Les Sorcières, blends 50% Syrah, 30% Grenache, and 20% Carignan from vines aged between 40 and 80 years. The domaine also produces wines from nearly century-old vines, including Grenache Blanc Vieilles Vignes and Côtes du Roussillon Villages Vieilles Vignes.
