Champagne Marc Hébrart is rooted in the Vallée de la Marne, encompassing 15 hectares of vineyards, with sites classified as Premier Cru and Grand Cru. These holdings are located in Mareuil-sur-Aÿ, Avenay Val d’Or, Bisseuil, Aÿ, Avize, Chouilly, and Oiry. The vineyards comprise 70% Pinot Noir and 30% Chardonnay, with the estate practicing organic methods.
Jean-Paul Hébrart has managed the estate since 1997, continuing the legacy of his father, who began bottling wines in 1964. Jean-Paul vinifies over 85 separate plots, each reflecting its unique terroir. This cuvée blends 85% Pinot Noir and 15% Chardonnay, sourced from Premier Cru sites in Mareuil-sur-Aÿ, Avenay Val d’Or, Mutigny, Hautvillers, and Bisseuil. Comprising 40% of the 2021 harvest, 30% of the 2020 harvest, and 30% reserve wine, it undergoes malolactic fermentation and ages in stainless steel. The wine spends 24 months on the lees before disgorgement, with a dosage of 7 g/L.
2. Champagne Marc Hébrart 'Sélection' 1er Cru Brut
This cuvée consists of 70% Pinot Noir and 30% Chardonnay from 50+-year-old vines in Mareuil-sur-Aÿ and Avenay Val d’Or. The base wine is 60% from 2020, 30% from 2019, and 10% from 2018. Fermented and aged in stainless steel, it undergoes malolactic fermentation and spends 30 months on the lees. The dosage is set at 6 g/L.
3. Champagne Marc Hébrart Blanc de Blancs 1er Cru Brut
Made from 100% Chardonnay, this cuvée includes 88% fruit from Mareuil-sur-Aÿ Premier Cru and 12% from Grand Cru vineyards in Oiry and Chouilly. The blend comprises 60% from 2020, 20% from 2019, and 20% from 2018. Fermentation occurs in stainless steel, with malolactic fermentation followed by 36 months on the lees. The dosage is 6 g/L.
4. Champagne Marc Hébrart Rosé 1er Cru Brut
This blend of 50% Pinot Noir (including 6% vin rouge) and 50% Chardonnay comes from Mareuil-sur-Aÿ Premier Cru. The Chardonnay is primarily from the 2021 vintage, while the Pinot Noir is from 2019-2020. Vin rouge is aged in barriques, while the rest is fermented and aged in stainless steel. The wine spends 24 months on the lees, with a dosage of 6.5 g/L.
5. Marc Hébrart Rosé Extra Brut
This Extra Brut rosé combines 50% Chardonnay (2021 base) and 44% Pinot Noir (2019 and 2020). Both varieties are from Mareuil-sur-Aÿ Premier Cru. Fermentation and aging occur in stainless steel, with a minimum of 24 months on the lees. Malolactic fermentation is completed.
6. Marc Hébrart 'Rive Gauche-Rive Droite' Grand Cru Brut 2013
A 50/50 blend of Chardonnay and Pinot Noir, this cuvée features fruit from Grand Cru sites in Aÿ, Oiry, Chouilly, and Avize. The wine is fermented and aged in oak barrels and rests on the lees for over 60 months.
