Champagne Fleury Sonate 2013 Extra Brut is a pure, sulphite-free expression of the vineyard, crafted from 92% Pinot Noir and 8% Pinot Blanc, with zero dosage. The nose is vibrant, offering aromas of fresh yellow fruits and subtle toasted nuts. On the palate, the wine is generous and original, with an ample texture and a mineral finish of remarkable length. With an aging capacity of up to 5 years, this cuvée pairs beautifully with mushroom, snail & Chaource Risotto Champenois, carrot gnocchi with orange sauce, or pear and parmesan scones.
Founded in 1895 in Courteron, in the southern Champagne region (Côte des Bar, Aube), Champagne Fleury has long been shaped by its deep respect for nature and terroir. The estate’s vineyards rise along the slopes where the first tributaries of the Seine flow, facing south and southwest — ideal exposures for healthy, expressive fruit. The domaine farms 15 hectares, planted to 85% Pinot Noir, 10% Chardonnay, and smaller plots of Pinot Blanc, Pinot Gris (replanted in 2010), and Pinot Meunier. The oldest vines date back to 1970, with regular replanting to maintain vitality and balance. For over 30 years, Champagne Fleury has embraced a holistic approach — cultivating the vineyard as a living organism. Biodynamics guide every decision, respecting both terrestrial and cosmic rhythms. Vineyard work is timed to the lunar calendar: ploughing, canopy work, pruning, and harvest all follow natural cycles to support the health of soil and plant alike. The wines are certified Organic and Biodynamic, expressing this living connection to their terroir.
