A proponent of organic farming methods and a hands-off philosophy in the cellar, Marc Soyard has brought the lessons he learned at Domaine Bizot to Domaine de la Cras. The 2022 Bourgogne Coteaux de Dijon Rouge bursts with aromas of rowanberries, cherries, eucalyptus, and spice. This medium-bodied, fine-boned wine features a salty fruit core, soft tannins, and a mineral finish. Vinified using only whole bunches and minimal sulfur dioxide, it is an expressive wine that is already hard to resist.
Originally from a non-vineyard family in the Jura, Marc had worked for six years as a vineyard manager at Domaine Bizot in Vosne-Romanée, where he also worked in the cellar, collaborating closely with Jean-Yves Bizot and learning the winemaking process. At Domaine de la Cras, he implemented the philosophy of minimal intervention and the natural approach he learned at Domaine Bizot. All vineyards are farmed organically, with some biodynamic techniques. Vinification is carried out using natural yeasts and minimal sulfur, and the wine is aged in both new and used barrels, with experiments in the use of different types of wood, including oak, chestnut, and acacia.
