Wasenhaus is one of the most promising start-ups in Germany and is currently regarded as the most interesting new project in Baden. The talented duo behind Wasenhaus, Christoph Wolber and Alexander Götze, met in Burgundy while interning at renowned estates like Domaine Leflaive, Pierre Morey, Comte Armand, and Domaine de Montille. Their production volume remains quite small, focusing on quality over quantity.
Wasenhaus Hohlen Spätburgunder 2022 is a Pinot Noir grown on the shallow, poor limestone clay soils of the Zunzinger Rosenberg site, with a southwest exposure. The vineyard is primarily planted with German clones, with half of the plot consisting of Pinot vines planted in the 1960s in a fairly dense configuration. Fermentation is carried out with 90% whole bunches, beginning with carbonic maceration, followed by a classic open vat fermentation with partial punchdowns. The wine is then aged for 16 months in used French oak barrels.
Wasenhaus wines are crafted in a rented house in the village, embodying a truly artisanal approach. The wines are basket-pressed, fermented with whole clusters in wooden cuves, and aged on the lees for over two winters in Burgundian barrels. Afterward, they are racked to stainless steel tanks for a few months to regain precision and freshness. Wasenhaus wines are bottled without pumping, fining, or filtration, with just a very modest dose of SO2. The result is pure, dry, fresh, and authentic wines, characterized by ripe and concentrated fruit flavors, mineral finesse, vibrant energy, and a highly digestible finish.
