Hohlen Chardonnay is a terroir-driven wine from Baden, crafted by the talented duo Christoph Wolber and Alex Götze of Wasenhaus, known for their natural winemaking approach. The cooler climate of the Hohlen vineyard, along with its limestone-clay soils, imparts a fresh, cool character to this Chardonnay. The grapes were whole-bunch pressed, with fermentation taking place in used barrels of varying sizes. The wine was aged for one year in barrels on lees, followed by an additional six months in stainless steel, also on lees.
The Wasenhaus Hohlen Chardonnay 2022 is an elegant wine with a cool, refined aroma, featuring notes of salty lemon and a subtle herbaceous character. As it breathes, these flavors become even more pronounced. On the palate, it offers a fine texture with a gentle, mellowing sensation, showcasing a minimalist, restrained style. The wine's well-balanced core of ripe fruit is complemented by hints of slightly underripe apricot. Its acidity is delicate, with a subtle saltiness on the finish, and it displays impressive length.
Wasenhaus adheres to organic farming principles, consciously avoiding synthetic chemicals in their vineyards and adopting a minimalist approach in the cellar. Their vineyard plots, spanning various terroirs, are primarily planted with Pinot Noir and Chardonnay. The region’s cool climate and diverse soils create optimal conditions for cultivating these Burgundian varieties. Embracing a hands-off winemaking approach, Wasenhaus ensures grapes are hand-harvested, with spontaneous fermentation facilitated by natural yeasts. In the case of their red wines, notably their praised Spätburgunder, whole-cluster fermentation is frequently used, contributing depth and structure. Aging takes place in used French oak barrels, which impart subtle oak nuances while allowing the fruit’s purity and the terroir’s characteristics to shine. The resulting wines are fresh, refined, and intensely expressive of their origin. Wasenhaus’ Pinot Noirs, often likened to fine Burgundy, offer a harmonious interplay of fruit, acidity, and earthy minerality. Their Chardonnays, noted for their precision, minerality, and layered complexity, occasionally reveal a creamy texture, counterbalanced by vibrant acidity.
