The first vintage of Wasenhaus was released in 2016 and was met with great success. Christoph and Alexander employ a gentle extraction method, with minimal cap piercing during fermentation, and periodically stir the wine to ensure a stable fermentation from the outset. Sulfur is used sparingly and only after malolactic fermentation. All wines are aged in oak barrels.
Pinot Noir Vulkan is grown on shallow black volcanic soils and is a blend of 15 different Pinot Noir clones. Spätburgunder Vulkan features a deep, intense, yet clean and elegant peppery-spicy flavor. On the palate, it presents as a full-bodied and juicy wine with a silky texture, vibrant freshness, and a straightforward character. The wine flows with a linear precision, showcasing very fine tannins and remarkable vitality.
The Black Forest hills to the east influence the vineyards to the southeast, cooling them with night winds and allowing grapes to ripen perfectly while maintaining high natural acidity. The Weingut Wasenhaus was founded by Alexander and Christoph after many years of working at renowned Burgundian estates such as Domaine Leflaive, Domaine Comte Armand, and Domaine de Montille. After gaining invaluable experience with some of the best winemakers in Burgundy, they decided to return to their homeland and apply their knowledge to the terroir of Baden. Their old vineyard plots are located in and around Staufen and the neighboring Kaiserstuhl district. Alexander and Christoph follow biodynamic principles in the vineyards and practice minimal intervention in the cellar.
