Wasenhaus is one of Germany's most sought-after producers today. Like Möhlin, Bellen is a wine built for long-term storage: it can be enjoyed now, but it also ages beautifully for up to 10 years in the cellar. German-born Christoph Wolber and Alexander Götze met in Burgundy while working at some of the region's top organic and biodynamic estates (Alex at Pierre Morey and de Montille, and Christoph at Leflaive, Bernhard van Berg, Domaine de la Vougeraie, and Comte Armand). In 2018, they returned to Germany to launch their wine project in Baden—Wasenhaus. All the vineyards they manage, both owned and leased, are farmed using organic and biodynamic principles. They also encourage winegrowers from whom they source grapes to follow the same practices. While the geological changes in Baden may not be as pronounced as in Alsace, the region is a diverse patchwork of rock types—granite, volcanic, and limestone, with loose topsoil. All grapes are hand-harvested, and the wines are naturally fermented (some undergo partial carbonic maceration) with minimal intervention. Red wines are fermented with stems. Both red and white wines are aged in old French oak barrels and are neither clarified nor filtered.
