Marc Hébrart, who started his viticultural career at the age of 17, has elevated his family’s Domaine in Mareuil-sur-Aÿ to a model of excellence. Renowned for his meticulous methods, he prioritizes organic practices and keeps synthetic treatments to a minimum, focusing on low yields to guarantee both quality and adaptability in his winemaking. By dedicating efforts to creating reserves for future vintages, Hébrart produces wines that combine lively fruit character with crisp acidity, delivering both instant charm and remarkable aging capacity.
Champagne Marc Hébrart Noces de Craie Grand Cru Blanc de Noirs 2019 is a pure expression of Pinot Noir from the historic grand cru village of Aÿ. Disgorged as an extra-brut with 3.5 g/l dosage, it presents a refined bouquet of spices, white flowers, orchard fruits, and delicate pastry. Medium to full-bodied with a vinous richness, its fleshy fruit core is balanced by bright acidity and a fine, precise mousse. A saline touch enhances the mid-palate, leading to a long, gastronomic finish with subtle bitterness. A Champagne of elegance and depth, perfect to enjoy now or cellar through 2044.
Champagne Marc Hébrart, led by Jean-Claude Hébrart, is a family-run Domaine with roots dating back to 1962, when Jean-Claude’s father bottled the first Champagnes with just three barrels. Today, the estate encompasses 17 hectares of meticulously tended vineyards across 80 parcels in 11 villages, predominantly in the grand cru terroir of Aÿ. Known for precise viticulture, Hébrart employs the Chablis pruning method to benefit Chardonnay vines, practices soil tillage throughout the estate, and refrains from sowing cover crops. The resulting Champagnes are celebrated for their vinous intensity, bright crystalline clarity, and saline-driven textures, offering a pure expression of their terroir.
