Cuvée 3A assembles fifty percent Chardonnay from Avize’s Grand Cru terroir in the Côte des Blancs with twenty-five percent Pinot Noir from Aÿ and twenty-five percent Pinot Noir from Ambonnay, both Grand Cru sites within the Montagne de Reims. Avize’s limestone soil, rich in belemnite fossils, imparts freshness, minerality and finesse to the Chardonnay, derived from vines over fifty years old and vinified in 225-litre oak barrels. The Pinot Noir grapes come from old vines planted in the 1950s, cultivated on chalky slopes offering southern exposure and balanced microclimates influenced by surrounding forests. Fermentation and maturation occur equally in stainless steel and oak, with reserve wine comprising twenty percent of the blend. The wine displays aromas of lemon, pineapple, cassis and raspberry, along with a buttery quality linked to the barrel aging. Dosage stands at 5 grams per litre. This cuvée is produced following organic and biodynamic principles, with manual harvesting, no filtration or fining.
