The vineyard’s chalk soils and vine age exceeding 80 years contribute to natural concentration and structure. Managed by organic and biodynamic principles with horse-drawn ploughing, the fruit is hand-harvested and fermented entirely in oak barrels. The wine undergoes no filtration or fining and includes 25% reserve wine maintained in permanent stocks. Dosage is set at 4 g/L. The resulting profile is marked by mineral clarity and defined aromas of almond, acacia, linden, honey, and a subtle raspberry element.
