De Sousa is particularly well regarded among sommeliers and collectors, with a long-standing focus on organic and biodynamic viticulture in Champagne. The estate was among the early adopters of these methods in the region, alongside a consistent use of barrel fermentation to shape texture and depth. Vines average 50 to 70 years of age, naturally limiting yields while increasing concentration. A significant part of production is allocated to export markets, notably Japan and the Netherlands.
Cuvée des Caudalies Le Mesnil 2013 comes from century-old Chardonnay vines in the Secteur des Chétillons, one of the most regarded sites in Mesnil-sur-Oger. The wine is entirely fermented and aged in oak for 10 months, followed by more than eight years on lees in chalk cellars, with organic and biodynamic farming in the vineyard. Production remains limited, with around 2,000 bottles released for certain editions. The profile is built around precision and structure, showing ripe white fruit, brioche and toasted almonds alongside a saline edge typical of Le Mesnil. The palate is direct and tense, with fine, creamy mousse and pronounced acidity, while the low dosage of 3 g/L keeps the focus on the chalk-driven core and layered texture. Designed for long ageing, with a potential of 15–20 years.
