Diebolt-Vallois Blanc de Blancs Brut is made from 100% Chardonnay sourced from Grand Cru vineyards in Chouilly and Premier Cru vineyards in Cuis, near Épernay. It is vinified in temperature-controlled stainless steel vats to preserve freshness and varietal clarity. The wine was bottled for tirage in 2024 and aged on lees for two years in the cellars before disgorgement. The dosage is 2 g/L (Extra Brut). This Blanc de Blancs expresses the Côte des Blancs terroir with precision, combining mineral structure with vibrant acidity. It shows a pure profile, reflecting the limestone soils of Chouilly and the fresher character of Cuis. It works well as an aperitif or paired with seafood, sushi, or fish tartare.
