Diebolt-Vallois Fleur de Passion 2014 is a Blanc de Blancs Champagne crafted from 100% Chardonnay, sourced exclusively from old vines aged between 40 and 90 years in the Cramant Grand Cru terroir. The grapes are vinified using traditional methods, with fermentation conducted in aged Burgundian oak barrels. Malolactic fermentation is omitted to preserve natural acidity and freshness. The wine matures on lees for approximately eight to nine years prior to disgorgement, with most bottles from the 2014 vintage disgorged in April 2023. The bouquet presents lemon peel, acacia blossom, brioche, hazelnut, and subtle vanilla derived from the oak. On the palate, the structure is precise, marked by a pronounced acidity and chalky minerality reminiscent of the limestone soils. The texture is creamy, a result of extended lees aging, with a long and focused finish. This cuvée reflects the distinctiveness of the Cramant Grand Cru and the 2014 vintage. It pairs well with oysters, shellfish, fine white fish, and delicate poultry, complementing their texture and flavor with its balance and minerality.
Diebolt-Vallois is a family-run Champagne house founded on the union of Jacques Diebolt and Nadia Vallois; the Diebolt family has been rooted in Cramant since the late 19th century, while the Vallois family has cultivated vines in Cuis since the 15th century; Jacques began his career working alongside his winegrowing grandfather, and the first harvest was made in 1959; from the late 1970s the estate expanded significantly, with vineyard growth and the construction of its own cellars; in 1984 Arnaud and Isabelle joined the domaine, bringing new momentum, followed later by Laurence, Arnaud’s wife; since 2016 the third generation — Ophélie, Philippine and Guillaume — has taken an active role; today three generations work together, maintaining continuity and a shared vision; all production facilities are concentrated in Cramant (Grand Cru, Côte des Blancs), including presses, stainless steel and wooden vats, and cellars carved more than 14 metres deep, providing stable ageing conditions; the vineyard covers around 15 hectares, mainly in the Côte des Blancs — Cramant, Chouilly, Oger and Le Mesnil-sur-Oger (Grand Cru) and Cuis (Premier Cru), with additional parcels in the Coteaux d’Épernay, while Pinot Noir and Pinot Meunier are grown in the Ardre Valley and the Côte des Bar; Chardonnay accounts for nearly 90% of plantings, shaping the focus on Blanc de Blancs, Prestige, Millésime and Fleur de Passion cuvées, while Tradition and Rosé are blends of the three main grape varieties; the diversity of sites and soils allows for precise and balanced wines; the estate places strong emphasis on careful soil work and environmentally conscious practices to preserve the ecosystem and express the identity of each parcel.
