Champagne Diebolt-Vallois Tradition Brut is a blend of 38% Chardonnay and 62% Pinot Noir from Premier Cru vineyards in Cuis, Epernay, and the Côte des Bar. Vinified in temperature-controlled stainless steel vats to preserve freshness and varietal integrity. Aged for three years on lees before disgorgement in 2023. Dosage set at 4g/L (extra-brut) to maintain a delicate balance. Chardonnay contributes tension and purity; Pinot Noir provides structure and roundness. The result is a precise and balanced Champagne, suitable for a refined aperitif or to accompany the start of a meal.
Diebolt-Vallois is a family-run estate based in Cramant (Grand Cru, Côte des Blancs), shaped in 1959 following the marriage of Jacques Diebolt and Nadia Vallois; today it is managed by the next generation, maintaining a strong focus on estate-grown fruit and precise expression of terroir; the domaine covers around 11–14 hectares, with key parcels in Cramant and Cuis, where chalk soils define structure, clarity and length on the palate; the core of the production is Chardonnay, particularly Blanc de Blancs, alongside selected blends including Pinot Noir and Pinot Meunier; the winemaking approach is restrained, with fermentation mainly in neutral vessels, low dosage, and in certain cuvées the use of old oak and no malolactic fermentation to enhance ageing potential; the house style is built on precision and energy, and the wines are consistently listed in high-level restaurant wine lists.
