Ulysse Collin, Les Pierrières Blanc de Blancs Extra Brut, is an terroir Champagne made from Chardonnay grapes harvested from the Les Pierrières vineyard. This 1.2-hectare monopole vineyard is located in Vert-Toulon, a hamlet near Olivier Collin's home village. The 40-year-old vines thrive on poor, chalky soils with silex, a rare geological combination that gives the wine its distinctive and expressive character. The vineyard benefits from southern and southeastern exposures, optimizing ripening conditions. The grapes are harvested by hand. Vinification occurs in Burgundy barrels, 10–25% of which are new, with fermentation lasting up to six months, followed by malolactic fermentation. The wine is bottled without clarification or filtration. Bottling takes place each July, with Olivier blending the base wine with reserve wine in a ratio determined intuitively. The Champagne is then aged on the lees for 36 months.
