Diebolt-Vallois Blanc de Blancs Brut is made from 100% Chardonnay sourced from Grand Cru vineyards in Chouilly and Premier Cru vineyards in Cuis, near Épernay. It is vinified in temperature-controlled stainless steel vats to preserve freshness and varietal clarity. The wine was bottled for tirage in 2024 and aged on lees for two years in the cellars before disgorgement. The dosage is 2 g/L (Extra Brut). This Blanc de Blancs expresses the Côte des Blancs terroir with precision, combining mineral structure with vibrant acidity. It shows a pure profile, reflecting the limestone soils of Chouilly and the fresher character of Cuis. It works well as an aperitif or paired with seafood, sushi, or fish tartare. Diebolt-Vallois is a Champagne house based in the Grand Cru village of Cramant in the Côte des Blancs; its modern identity was shaped by Jacques Diebolt in 1960, when he built new winery facilities and cellars and expanded the estate to its current 11 hectares; the family’s winemaking roots in the region date back to the 15th century; the vineyards are largely planted to Chardonnay, primarily in Cramant and the Premier Cru village of Cuis, as well as in Chouilly and Épernay, while Pinot Noir and Pinot Meunier are cultivated in the Montagne de Reims and the Côte des Bar; the chalk-rich, east-facing slopes of Cramant define the structure and direction of the wines, while the vineyards in Cuis are located on northwest- and south-facing slopes; the cellars are carved into the chalk hills of Cramant, where reserve wines age in vats or large casks and bottled wines rest on lees for several years before disgorgement and dosage; the house focuses on Blanc de Blancs, including its flagship cuvée Fleur de Passion from old-vine Cramant, alongside Brut and Rosé Champagnes.
