Domaine de la Cras is an innovative Burgundy estate owned by the city of Dijon – a monopole project reviving the region’s historic vineyards just outside the city limits​ . In 2013, the city purchased this 160-hectare property (with 8 hectares under vine) to preserve Dijon’s green belt and viticultural heritage. They entrusted it to Marc Soyard, a talented young vigneron from the Jura who honed his craft at the renowned Domaine Bizot in Vosne-Romanée​. Soyard brought with him a philosophy of organic farming and minimal intervention, making him the perfect steward for Dijon’s only wine domaine. Vineyards & Winemaking: All viticulture at Domaine de la Cras is organic (with biodynamic principles in play) on limestone-rich marls typical of the Dijon côte​. The hillside vineyards – 5 hectares of Pinot Noir (“En Bessy”) and 3 of Chardonnay (“Le Grand Bessy”) – are tended by hand, without synthetic products, to nurture biodiversity and vine health​​. In the cellar, Soyard employs a “hands-off” vinification learned from his mentor Bizot​. All fermentations proceed with native yeasts, and whole-cluster pressings are often used for the reds to enhance aromatic complexity and structure​. New oak is used sparingly – élevage occurs in a judicious mix of new and neutral French barrels, just enough to polish the wines without masking their character​.
